Chefs Ed Reavis and Marcelle Afram’s New Smoked Chicken Collaboration: A Culinary Fusion

All Set Restaurant & Bar and Fryer’s Roadside chef/owner Ed Reavis has teamed up with Shababi Palestinian Rotisserie Chicken’s Marcelle Afram to present a unique culinary experience that celebrates their culinary heritage.

Their joint Shababi Palestinian Smoked Chicken pop-up will offer a new pick-up and delivery menu through All Set Restaurant & Bar and Fryer’s Roadside. The pop-up menu will debut on April 17th through 19th, with pick-up and delivery available at Fryer’s Roadside in White Oak.

The following week, April 24th and 25th, All Set in downtown Silver Spring will be the pick-up location.

“The process of creating this collaboration with Marcelle felt very natural,” Reavis said. “We come from different backgrounds and cook different cuisines, but we found so much common ground while drafting both menus. The resulting product is one we’re very proud of.”

According to a press release, the highlight of the pop-up menu is the spatchcocked smoked chickens, featuring Afram’s signature Shababi spice blend on whole and half chickens smoked in Reavis’s 1000-gallon smokers used for his regional barbecue concept, Money Muscle BBQ. Guests can order Whole Smoked Chicken ($175, serves four to six) or Half Smoked Chicken ($90, serves two to three) meals, accompanied by five sides and a trio of sauces.

“When my grandfather was a tour bus operator in Palestine during the 1940s, Zarb, a smoked chicken dish, was a very popular offering at roadside stands,” Afram notes. “This collaboration will be the first time I’ve been able to smoke Shababi chicken, thanks to Ed’s smokers. To be able to offer Shababi in one of the original styles of the Palestinian chicken which inspired the concept is very fulfilling.”

This culinary collaboration will culminate in a chef’s dinner at All Set on April 27th. The dinner will showcase a family-style menu that combines Palestinian spices and flavors with the restaurant’s seafood-focused offerings. Reavis and Afram will be present to guide guests through the fusion menu, which will feature dishes prepared in Reavis’s wood-fired oven on the restaurant’s patio.

Shababi Palestinian Smoked Chicken pop-up orders can be placed online for pick-up and delivery at All Set and Fryer’s Roadside starting April 17.
